| Abstract: | This invention relates to a process for the manufacture of fat free ready-to-eat(RTE) flaked food from cereals selected from maize, jower,rice, or mixture thereof, which comprises cleaning, grading of whole grain cereals by conventional methods such as here in described, soaking the cleaned and graded whole grains in hot water at a temperature in the range of 60-9 5CC and leaving for a period of 10-15 hours without maintaining the temperature, draining the water and roasting the soaked grain at a temperature in the range of 12O-3O0°C for a period in the range of 40 sec-10 min, milling the roasted grain to obtain grits of size in the range of 3 to 8 mm mesh, flaking the roasted grits by conventional manner such as herein described, drying the flakes at a temperature 40-80°C for a period of 5-60 minutes, mixing the obtained flakes with additives characterized in comprising of 0-0.5 wt% of flavoring agent, 1- 10 wt% of taste maker ingredients and 0-0.02 wt% antioxidants as defined herein, tempering for 2-6 hours, drying at a temperature in the range of 40~80°C for a period of 5-60 minutes, toasting the dried flake at a temperature in the range of 150-350°C for a period of 5-50 second to obtain desired ready-to-eat flaked foods. | ||
