Abstract: The present invention relates to a process for preparation of stabilized wheat germ. Wheat grain consists of three integral parts namely endosperm (81-84 %), bran or seed coat (14 - 16 %) and germ (2 -3 %). In this process wheat germ is steamed in a pressure cooker at atmospheric pressure and then spread the steamed wheat germ on aluminium trays, followed by drying in a hot air dryer resulting into stabilized wheat germ. The resulted wheat germ has excellent stability for 90 days, attractive creamish colour and good retention of vitamin E.
