| Abstract: | The present process comprises an improved method of turmeric processing. The process of obtaining the turmeric powder directly from the fresh rhizome has been achieved through careful calibrated process steps such as calibrated slicing of turmeric rhizome to a thickness of 1-3 mm irrespective of the fiber direction and controlled hot air drying of the obtained slices for a short time duration at differential time and temperature ranges during drying so that no additional energy is needed to get dried turmeric slices for production of turmeric powder. |
