| Abstract: | The present invention relates to a method of in-vitro detoxification of multiple mycotoxins using Lactococcus lactis subsp. lactis which is isolated from traditional milk samples. The mycotoxins as disclosed in the present invention are ochratoxin A (OTA), zearalenone (ZEA), fumonisins B1 (FB1), deoxynivalenol (DON) and citrinin (CIT). In one aspect present invention relates to process of inactivation of spore germination and inhibition of biosynthesis of fumonisin B1 micotoxin using Lactococcus lactis subsp. lactis. The species Lactococcus lactis subsp. lactis produces novel antimicrobial metabolites such as 2,4-diotert-butylphenol, Pyrazinamide, and 3-5-dihydroxy-6-methyl-2,3-dihydro-4H-pyran-4-one. |
