| Abstract: | The crystalline sugar, sucrose, a disaccharide comprise a glucose and a fructose unit, used in many food products as sweetener is naturally white in colour and does not have any flavour. Thus, the limitation of using this sugar is confined to impart sweet taste and the energy. Though its application in coffee, tea and beverages etc. are well known however when it goes to the products like baked foods, fresh beverages and in coloured food products have limitations. The present invention reveals the preparation procedure for flavouring the sugar with natural flavourant, cardamom oil along with the addition of natural colour, curcuminoids, the turmeric colourant, gives the appealing colour and flavour which has the advantage when used in various food products. The health benefits associated with the additives is an added advantage and the methodology optimized in this process result with the unique characteristics of retaining the crystalline nature of sugar with added colourant and flavourant. |
