Title:

A Process for the Preparation of b- carotene and Mineral Fortified Buns

Value Proposition:

The buns were fortified with natural source of b- carotene, iron and zinc from synthetic food grade sources. The natural source of b- carotene used does not require any pre- processing and is feasible for large scale processing. By substituting the hydrogenated fat used in this bakery product provides other vitamins in addition to b- carotene. Bioaccessibility of minerals  and b- carotene is enhances in the buns. The retention of b- carotene on processing and stability on storage was satisfactory. The quality of buns was found to be acceptable. The process know-how of the buns has a practical application in the production of micronutrient rich buns which serves  one of the national strategies of using a sustainable food based approaches for alleviation of existing multi- micronutrient deficiencies.

Summary Application:

The product can be used for alleviation of iron, zinc and vitamin A deficiencies for Children of 2-10Y . The product is highly liked by children.
