| Abstract: | The present invention relates to a protein enriched product and its process of preparation from cowpea (Vigna unguiculata). The process particularly relates to the extraction of milk from the cowpea by soaking, grinding and sieving techniques. It also relates to filtration, boiling the milk, cooled to 82o±2oC and adding different coagulants (magnesium chloride, calcium chloride, calcium sulfate, and citric acid to complete the coagulation. The curd was dispensed into a mold, and pressed with different weights to obtain protein enriched product, protein enriched product . The protein enriched product comprising of 19.06-22.33% protein was vacuum-packed in a retort pouch and pasteurized. Protein enriched product was evaluated for proximate, sensory evaluation for consumer acceptability, microbial analysis and storage studies. |
