| Abstract: | The process for the manufacture of sugar-cane juice powders is presented herewith. The raw sugarcane of 12 months maturity is first crushed in a three roller crusher to produce juices of brix 12-15 %. The highlight of the invention is all the unit operations associated with the production of cane juice powders is done in a single equipment, i.e thermic oil kettle. The unit operation is of the order; clarification, where 0.05 % of lime is added to remove the scum and dirt associated with the cane juices. Typically, around 3-5 % of the total juice weight is removed as a scum. Clarification unit operation is done at a temperature of 45 C. Further, temperature is increased to 100-112 C, where concentration of juices occurs, where the concentration of juices changes from 15 brix to 75 brix. Once the 75 brix is reached, temperature is cut off and stirrer is on at a speed of 15-20 rpm. Crystallization step is initiated with stirring with simultaneous heat dissipation step. Temperature drops to 70-80 C at the end of the products with solid lumps of products at a moisture content of less than 1.5 % is obtained. The final lumped solids are stirred in a size reduction unit operation to produce finely powdered sugarcane juice powders of desired flow properties and size. |
