Modified atmosphere packaging of minimally processed vegetables prolongs storage stability, preserves physicochemical quality and nutritional integrity, suppresses microbial growth, minimizes post-harvest losses, facilitates long-distance distribution, enhances product safety and convenience, and adds commercial value while promoting sustainable supply-chain management.

Summary Application:

Modified atmosphere packaging is applied to minimally processed vegetables to control respiration and microbial activity, extend shelf life, retain sensory and nutritional quality, reduce post-harvest losses, enable refrigerated distribution, and supply safe, fresh-like vegetables to domestic and export markets.

Advantages:

It helps vegetables stay fresh for a longer time by slowing spoilage. It keeps their color, texture, taste and nutrients, reduces harmful microbes and food waste, improves safety and convenience, allows longer transport and storage, and increases the overall market value of minimally processed vegetables.
