Preparation of Collagen Peptide using Fish Skin as the collagenous source

Summary Application:

The process technology comprises of five steps namely (a) alkaline pre-treatment, (b) lipase pre-treatment, (c) hydrolysis, (d) concentration and (d) spray drying. The uniqueness of the present process is the alkaline pre-treatment with low concentration of alkali that favours enhanced yield of the collagen peptide (around 29.0%).
