Abstract:
The invention relates to a process for the quantification of taste in food items. The determination of taste comprises an electrochemical cell having a sensing electrode.  The response is recorded for serial dilutions of standard taste compound solution. The desired features are extracted and subjected to statistical methods such as partial  least square analysis leading to the formation of multidimensional manifold scale. This invention is also capable of estimating the amount of tastants required to reach  the desired taste parameter and also, able to differentiate between the taste of the food and beverages. This renders its usefulness in “taste engineering” applications.
