Title:

Process for the Production of Spray Dried Coconut Milk Powder

Value Proposition:

Coconut whey is one of the by-products during virgin coconut oil process.  Whey proteins as functional and nutritional ingredients in food, pharmaceutical and cosmetic industries. It has high digestibility and therefore have high biological value, which is a measurement of high nitrogen availability and utilization. In addition, it has an excellent amino acid balance, including both essential and sulphur containing amino acids. These properties highlight the nutritional quality and effectiveness of whey proteins both as a direct dietary supplement and can be formulated as a skimmed milk powder.

The process will involve shelling, paring, grating and squeezing to obtain coconut milk. The coconut fat will be separated from the milk and the remaining skim milk will be formulated with or without cow milk along with other ingredients followed by spray drying to obtain coconut milk powder. Storage and sensory analysis will be done for the developed product along with packaging requirements for achieving the expected shelf life.

Summary Application:

It is the base for all Asian curries, gravies and can be used in the preparation of different sweets where coconut flavour is suitable and it is estimated that the industry will  usher in  a  stable growth space. The global market for coconut milk powder was valued at 800 Mn USD in  2018 and is expected to grow at a CAGR of 4.7% during 2019-2025

Advantages:
  • Well-ripened fresh coconuts are dehusked, deshelled, paring removed and grated.
  • The grated coconut is comminuted and milk is extracted using a suitable press.
  • The milk thus obtained is formulated and standardized.
  • The formulated milk is homogenized and spray dried under optimum conditions.
  • The dried powder is packed in laminated pouches with or without nitrogen.
