Production of Coconut Spread from Mature Coconut Water Concentrate & Coconut Dietary Fibre

Value Proposition:

Coconut spread prepared from mature coconut water concentrate and coconut dietary fibre is a nutritious value added product that utilizes by products from coconut processing. Mature coconut water, often discarded during copra or desiccated coconut production, contains sugars and minerals, while coconut fibre provides dietary fibre. Combining these components results in a wholesome spread with natural coconut flavor, enhanced nutritional value, and improved utilization of coconut processing residues.

Summary Application:

The process involves concentrating mature coconut water to increase solids and sweetness, followed by blending with coconut dietary fibre to obtain a smooth spreadable consistency. Additional ingredients and flavoring agents may be incorporated to improve texture and taste. The final product is pasteurized and packed in suitable containers. The spread can be used on bread, bakery products, desserts, and snack foods.
