 Technology Profile

Title:

Sesame: Dehulling, (wet process)

Value Proposition:

The wet dehulling process of sesame seeds produces clean, high quality hulled sesame while preserving oil content and natural nutrients. It enhances product uniformity, appearance, and taste, making it suitable for food processing, bakery, confectionery, and oil extraction industries. This technology ensures maximum value recovery from seeds, reducing wastage and improving overall efficiency for industrial and domestic applications.

Summary Application:

Sesame seeds are soaked, softened, and mechanically dehulled to separate the outer hull from the kernel without compromising the oil content. The hulled seeds can be used for edible oil extraction, tahini, bakery products, confectionery, and snack items. The process can be scaled for industrial production and ensures a consistent, high quality product suitable for both domestic and international markets.

Advantages:

Wet dehulling improves oil extraction efficiency, reduces bitterness, and enhances flavor. It produces uniform, high quality sesame kernels for further processing. The method minimizes dust, hull contamination, and microbial load, supports ready to use sesame products, and contributes to higher economic returns for sesame processors.
